4 cucumbers, peeled and seeded
½ - 1 garlic clove
1 Cup double cream Greek style yogurt
2 Tablespoons of fresh lemon juice
¼ Cup water, 2 sprigs spring onions, chopped
¾ Cup fresh garden mint
salt and pepper to taste
Place everything in a blender and blend until smooth..
Serve in beautiful glass bowls at your Christmas table or in glasses on a canape table..
Garnish with a fresh mint leave, garlic oil and fresh radish slices..
