Chocolate Brownies are simply just YUMMY! So easy to make and so tasty! The ideal sweet treat if you crave chocolate! This recipe also comes a long way with me and I would like to share it with you! We used to make this lovely chocolate brownie at Bluegum Estate for dinner desserts. Here I found that this is a lovely quick recipe, just a few steps, it bakes, and you cut it and off you go! It is made of dark chocolate - I prefer Nestle Albany chocolate or a dark Belgium good quality chocolate. The walnuts are lovely with, and as we learnt in chef school - a brownie isn't called a brownie unless it contains nuts! Use this recipe if you heard last minute you will receive friends or guests. It goes well with either lovely freshly whipped cream or vanilla ice-cream. If you have more time on your hands, make a lovely flavoured home-made ice-cream with it! I will also share my basic ice- cream recipe with you. I prefer to serve my chocolate brownie recipe with my home-made cinnamon ice-cream. (You will see at the bottom of the recipe underneath cinnamon flavour you will see how to transform the vanilla into cinnamon.) There is just something about this combination... If you are a fan of cinnamon - this ice-cream may sound odd- but once you have discovered this combination yourself, you will see what I mean. Because this chocolate brownie is not too sweet the flavour goes really good with the ice-cream. This is also a popular item on a coffee shop menu or to make at home for your children. They freeze very well. Just pop it in the microwave for a few seconds until it is soft inside, add the cream or ice-cream, decorate it quickly and there you go. If you want to be a little bit smarter, add some ganache on top of the brownie (drizzle it for a nicer effect), then add the rest.

Ingredients:
100 g walnuts, roasted and chopped
225 g dark 80% chocolate
250 g butter
3 eggs
¾ cup caster sugar
¼ cup flour
cocoa or icing sugar for dusting
Instructions:

Preheat the oven to 180° Celsius.

Place the walnuts on a tray and roast for about 3-5 minutes depending on the speed of your oven. Be careful not to burn the nuts. Leave to cool and chop it up.

Place the chocolate and butter in a bowl and heat for about 3-5 minutes in the microwave until melted. Be aware of the speed of your microwave.

Whisk the caster sugar and eggs together and add it to the melted chocolate mixture.

Add the flour and chopped walnuts.

Spoon the mixture into a lined, square oven dish and bake for about 25 minutes. The top will form cracks.

Leave to cool a bit, gently turn it out of the baking dish.

NOTE: If you leave this overnight you might struggle the next day to get it out, and it would be difficult to cut too.
