Lemon Loaf
2 cups flour
1 tsp baking powder
1/2 tsp bicarb of soda
1/4 tsp salt
zest of 1 large lemon
1/2 cup butter
1 1/4 cup sugar
3 eggs
1/2 cup fresh lemon juice
1/2 cup milk
1/4 cup fresh lemon juice
1/2 cup icing sugar
Lemon Loaf
Sift the flour,, baking powder, bicarb of soda and salt together into a mixing bowl.
Beat the lemon, butter and sugar together until it has a light and fluffy texture'Add the eggs one by one to the mixture, whisking well after each addition.
Add the lemon juice and beat well.
Add all the dry ingredients that you sifted in step 1 above to the mixture and slowly add the milk and beat well.
Divide the mixture into two and pour it into tow loaf baking tins and bake for plus minus 45 minutes until golden brown on top.
Whisk all the glaze ingredients together.
Poke small holes in the lemon loaf and pour the glaze over.
Leave the loaf for ten minutes to soak up the glaze before turning out on a dry rack.
