This is an absolute favourite of my husband and we make this regularly. This delicious savoury dish goes very well with beef, but equally well with Roast Lamb for Christmas. This mini yorkshire puddings are also a winner on a traditional Sunday meal menu. Add savoury gravy and it will become soon a favourite of your family. Add in moms Perfect Roast Potatoes and warm vegetables and off you go to start a new week with your Sunday healthy meal.

Serves: 6 Prep time: 20 Minutes Cook time: 35 Minutes Ready in: 55 Minutes

Ingredients:
30 g dripping or 2 Tablespoons sunflower oil
140 g plain flour
½ teaspoon salt
2 eggs
225 ml milk

Instructions:

Grease 6 metal pudding moulds with the dripping or oil, then divide the remaining dripping or oil between the moulds. Preheat the oven to 220° Celsius, placing the moulds in the oven so the dripping can melt while the oven heats.

Sift together the flour and salt into a large mixing bowl and make a well in the centre. Break the eggs into the well, add the milk and beat, gradually drawing in the flour from the side to make a smooth batter.Remove the moulds from the oven and spoon in the batter until they are about half full.

Bake in the preheated oven for 30-35 minutes without opening the door, until the puddings are well risen, puffed and golden brown. Served immediately, as they will collapse if left to stand .
