Waffle with Strawberries and Whipped Cream

When I was small, I begged my mom to buy us a waffle machine! And with great luck, she did! I remember being thrilled about it and used to help on Saturday afternoons to make waffles for us as a family. It is with good memories that I share this lovely waffle with strawberries and whipped cream recipe with you. On the fruits side - you can add a few blueberries too inf you have.This is also a lovely breakfast idea for the kids or the breakfast waffle with seasonal fruits. Pansie flowers on top will make it look even prettier! For more breakfast options with fruits, try the healthy granola, yogurt and fruit parfait.

Ingredients

  • 2 eggs - separated
  • 4 cups oil
  • 2 Tablespoons sugar
  • 1 teaspoon salt
  • 1¾ cups flour
  • 1¾ cups milk
  • 4 teaspoons baking powder
  • 400-450 g strawberries, washed and slices or in ¼ pieces
  • 1-1½ cups of whipped cream or less-depending on your liking
  • OPTIONAL: 1-2 Tablespoons caster sugar for sprinkling over the strawberries
  • Mint leafs for garnish

Method

  1. Start by beating the cream and keep aside

  2. For preparing the waffles: Beat the egg yolks, milk and oil together

  3. Add the the flour, sugar, salt and baking powder

  4. Mix well

  5. In a separate bowl, beat the egg whites until stiff and fold into the egg yolk and flour mixture

  6. Spray your waffle machine with spray and cook before making the first waffle and wait until the light are off to start

  7. Ladle a spoon full of batter into the waffle machine and spread evenly before closing the lid

  8. Bake the waffles according to the waffle machine instructions until golden brown

  9. Continue making the waffles until you have no batter left

  10. Divide the strawberries into 8 portions, sprinkle the caster sugar over the strawberries if adding extra sweetness

  11. Place the whipped cream in a piping bag

  12. Divide the waffles onto the plates

  13. Add the portion of strawberries and pipe some whipped cream on top

  14. Garnish with a mint leaf
