You get all kinds of interesting muffins, but this one is definitely a keeper! It freezes well, pops it for a few seconds in the microwave and then further heat it in the oven and it's ready to be served.I believe in recipes that are not too complicated, and here is another one to add to your special recipe files. With this recipe, you can just pour the batter into the muffin pan itself, or use silicone muffin cups or paper muffin cups of all shapes and beautiful colours. With muffins, you can also be creative when setting it on the breakfast buffet table or when individually plated. If you are a busy working mom, you would probably prefer supermarket muffins packets where you can add the eggs and liquid. But take some time in quickly preparing this recipe. You will be impressed! You can add it to your children's lunch packets, grab it to eat just before a gym workout session or prepare it for a high tea session with your best friend!

Ingredients:
2 and ½ cups cake flour
1 and ½ cups sugar
3 eggs
200 ml milk
200 ml oil
1 Tablespoon cinnamon
2 Tablespoons ground ginger
1 apple, grated
1 and ½ teaspoon bicarb of soda
4 teaspoons baking powder
Instructions:

Preheat the oven to 180 °Celsius.

In a large bowl, mix all the dry ingredients together.

In a separate bowl, mix all the wet ingredients together.

Add the wet ingredients to the dry ingredients and stir until well mixed.

Divide the batter into a muffin pan with muffin cups for a fancier look.

It works just as well to not use muffin cups at all, but spray the pan well if using this route.

Bake about 15-20 minutes until a skewer comes out clean.

Serve with grated cheese, apricot jam or as is.
