Chicken Cashew Nut Curry
This chicken with cashew nuts recipe is definitely a lovely suggestion for a Sunday lunch meal or winter warmer. We usually eat it with rice and broccoli with cauliflower and cheese sauce. A bit of boerekos with it too! With this recipe again I love to use chicken breast fillets blocks/cubes. It is very easy to make and very tasty. Cashew nuts, on the other hand, are nowadays a bit more expensive, but if you can afford to make them, please do so. You won't be sorry for making this chicken with cashew nuts. You don't have to use so many cashew nuts, it is totally okay to use 1 packet of 100g. If you use salted nuts, be careful not to season the chicken too much with salt as well. I lightly season the blocks of chicken with salt and pepper before tossing them into the flour mixture. You can use raw cashew nuts as well if you prefer. You can also substitute the fillet pieces with chicken pieces such as thighs or drumsticks - just be careful to cook them properly as it is larger pieces and cook a bit longer than small fillet pieces. It is a simple recipe, can be made quickly and it contains only a few ingredients - which I love. The easier the recipe the better.
