Ingredients:
1 small pumpkin, diced
1 tbsp olive oil
1 onion, diced
1 garlic clove, minced
1 can coconut milk
2 cups vegetable broth
1-inch ginger root
salt and pepper, to taste
Instructions:

Heat the oil in a large casserole. Add the onions and garlic and sauté until translucent. Add the pumpkin, coconut milk, and broth. Cover and bring to a boil. Reduce the heat and simmer until pumpkin is fork-tender.

Transfer to a high-speed blender, add the ginger and blend until smooth.

Transfer to individual bowwls, Season with salt and pepper to taste and sprinkle a few roasted pumpkin seeds over the top.

Serve straight away. Enjoy!.
