With this upcoming summer season lying ahead of us, we will soon be moving to light meals such as salads, and it is a definite yes to start making your own creamy salad dressing! I believe every salad must be accompanied by a delicious salad dressing. It is like tomato and basil. It just goes together! And if you can find a lovely salad dressing that keeps up in the fridge for some time, even better!I enjoy having a creamy salad dressing over my salads. In fact, what is a salad without a dressing? Quite boring I would say! There was a time when I started having my salads without dressing, I became a bit healthy obsessed with the whole 7 km running thing so we cut out a whole lot of stuff out of our diet. But I started missing it: the salad dressing, the coca cola etc. So I am back to the old life style and started to believe to enjoy everything. Just keep moderation into account. And there is nothing wrong to enjoy that piece of Carrot Cake too. And do some exercise. This particular creamy salad dressing is for me more of a creamy Italian salad dressing, made without mayonnaise. It is also close to a vinaigrette with the oil and vinegar mixed together and enhanced with herbs. I have also came across some salad dressings which are extremely salty. When you enjoy it over your salad, it taste delicious but you get extremely thirsty during the night time due to the high consistency of salt. As I am getting older, I can feel that I don't want to eat things that are too salty. I can easily feel when I had a meal which consisted of too much sat.With salad dressings you can also be creative when it comes to presenting it. You get the loveliest bottles to present the salad dressing in. I love the see-through bottles where you can see the dressing. Also if you own a small little coffee shop or restaurant and you present all your salt, pepper grinders, little portioned sugars, balsamic vinegar and olive oil you can present your dressing just as beautiful with a lovely label as well. This recipe is perfect for salads and especially your Greek salad with the Braai (BBQ)!

Ingredients:
3 cups oil, preferably olive oil
½ cup white vinegar
5 eggs
2 teaspoons fresh garlic
2 sprigs of spring onions
1 teaspoon salt
3 teaspoon mixed dried herbs
3 teaspoons sugar
Instructions:

Pour all ingredients into a blender or food processor and blend until smooth.

Pour into desired bottle and refrigerate.
