Somewhere I have read that Chicken Noodle Soup is really important when you are sick and will make you feel a lot better. I still can't figure out if it is really the truth, or is it just the thought of it? Anyway, this year chicken noodle soup became me and my husband's favourite meal of the winter. We just can't get enough of it and it is now on our weekly menu! And boy, did this delicious warm soup kept s extra warm during the past cold snowy nights! Chicken noodle soup is not just very tasty, it is very quick and easy to make as well! If you simply don't have some of the vegetables, add another, you won't even taste the difference. In this specific recipe I love using macaroni noodles, but you can play along with other types of noodles as well. We are fortunate to have a lovely chicken supplier shop here in Wellington, and I buy the chicken breast fillets packets at a very reasonable price. Or you can simply use off-cut pieces of chicken if you don't want to use chicken breasts. For me, chicken breast fillets are easy to work with and that also saves you some time if you are a busy working mom and always on the run. The reason for my blog is to keep a journal with quick and easy recipes. The world has become such a busy place, you are always looking to save up time to fit in that something-else to do! Ingredients:
3-4 chicken breast fillets, cubed
1 large onion, chopped
4 celery ribs, chopped
4 carrots, peeled, quartered and chopped
1-2 chicken stock cubes, depending on how salty person you are
2 handful macaroni noodles
about 1-1½ litre of water to fill up the pot
Instructions:

Fry the cubed chicken breast cubes with chicken spice and set aside.

Fry the onion in olive oil until light and glossy.

Add the carrots, leeks and celery and cook lightly for 2 minutes. Do not brown.

Fill the pot up with water, about 1.5 litres.

Add the cooked chicken and bring to a boil.

Reduce heat and simmer.

Take off skim that forms on top.

Add the macaroni noodles and cook for a further 10 minutes until noodles are just cooked.(al dente) .
