Smoked Chicken Salad
A smoked chicken salad is a very popular type of salad in any coffee shop. It is a lovely meal for a lovely summer's lunch, can be eaten for as a small dinner or even be as part of a large Sunday buffet table salad. I have always been keen on a smoked chicken salad - one because chicken is such a great ingredient for any meal and two - smoked chicken can keep up a few days in the fridge. Therefore you can make more meals from it. Add it to pasta or on the next day's work sandwich. You can also impress your guests with it as a small starter as part of a 3-course dinner. Smoked chicken can be bought from the local supermarket, or you can smoke the chicken yourself. It is not that difficult and you only need a few things. A black pot, wood chips for smoking, foil, water and a strainer. Place the foil in the large black pot, and cover it all over the pot's edges as well; Add the wooden smoking chips. Lightly sprinkle the wood chips with water, it must not be soggy. Place the strainer in the pot. Add the chicken breast fillets (you can slightly cook them in the oven beforehand for 10 minutes with salt and pepper). Add the pot's lid and smoke the chicken until they are a brown-yellowish colour and firm. Honey Curry Mayonnaise is the perfect combination for smoked chicken.
