This refreshing cold cucumber and mint soup can be used as a starter or served in small lovely glasses and be served as part of canapé’s and on platters. Ingredients:
4 cucumbers, peeled and seeded
½ - 1 garlic clove
1 cup double cream Greek style yogurt
2 Tablespoons of fresh lemon juice
¼ cup water, 2 sprigs spring onions, chopped
¾ cup fresh garden mint
salt and pepper to taste
Instructions:

Place everything in a blender and blend until smooth.

Serve in beautiful glass bowls at your Christmas table or in glasses on a canape table.

Garnish with a fresh mint leave, garlic oil and fresh radish slices.
