Banana Loaf Muffins
I have great memories of this delicious banana loaf muffins. The reason I have named it ‘Banana Loaf Muffins’ is simply because it is a basic banana loaf recipe, and can be turned into muffins as well. Like the Afrikaners would say ‘Twee vliee met een klap.’ When making this recipe you can decide if you would like banana muffins for the day or a lovely banana loaf. I used to make these banana loaf muffins very often while working at Augusta Kleinbosch Guest Farm. We had a lovely health breakfast on our breakfast menu and we served a muffin on the side. I used to make banana loaf muffins, instead of the sweet chocolate muffins. This health breakfast was very popular among our Wellington Wine Walk groups, as well as our European guests. Unlike our South- Africans who would straight go for the Farm breakfast with eggs, bacon and sausage the Europeans are quite healthy people. We can learn a lot from them. This recipe are from my early chef days. What I like about this banana loaf muffin recipe is that you can add chopped nuts if you feel like it. Some people love nuts, and others don't. What is lovely from banana loaf muffins is that the banana flavour enhance after a few days and will then be to its best. It is a good idea to make it a week day, keep it a few days and on a weekend enjoy it! A lovely treat. You can use beautiful muffin cups to make them even colourful. Or just bake them without it, the old fashioned way. It is a delicious mid-morning snack or a perfect idea for your children's lunch boxes! It's an easy recipe to follow and if you use a Kenwood machine, even better! Don't hesitate... bake them now! Everybody will go BANANAS!
